One word: YUM. I'm sure I've said it in other reviews, but I love Mexican food - tacos, burritos, you name it. Blue Corn is right next to a gaming store that my boyfriend and I wanted to visit on a Saturday afternoon, so we decided to give it a shot and were absolutely not disappointed. The restaurant is the end unit in a small strip mall, so parking is fairly easy to find and there are quite a few large trees that provide some good shade for your vehicle if you stop by on a hot and sunny day like we did. The front counter and dining areas are very clean and tables are nicely spaced to give folks a bit of elbow room and privacy. You can see the grill right behind the register and tons of fresh vegetables and homemade tortilla/etc. ingredients stacked around, and everyone works super fluidly together to crank out hot, fresh, and delicious food to customers. We ordered the fajita chicken burrito and a handful of their signature blue corn tacos with different fillings. Our meals came out pretty fast and they were HOT; it took me a couple of minutes to comfortably handle my burrito because of how piping hot it was in the foil lol. When the gentleman dropped our dishes off, he also asked if we'd like a couple of sides of homemade salsa and gave us the option to choose the spice level. We both chose hot, and he brought back a handful of individually packaged salsas - they were absolutely delicious and had a good kick to them. I didn't end up trying any of the tacos, but given the speed at which my boyfriend ate them... they were obviously very good. My burrito was absolutely delicious!! The flavor combinations of the freshly grilled veggies, chicken, and rice were perfect. Price point was reasonable, especially considering portion size. I only ate about 2/3 of my burrito and was more than satisfied. Location is fairly convenient, especially when we get the urge to visit the game store right next door. Since I took these photos, we've been back a couple of times and I know that there are going to be many more visits in my future. Stop in if you get the chance, and I'm positive you won't regret it.

Good food, plenty of delicious choices. Beware that these are NOT your run-of-the-mill AMERICANIZED cheese junk. You can get as much spice as you like - remember it's semi-fast-food - with fast-food seating, so ask for what you like. Slightly pricey when compared to Taco Bell, but worth so much more...

In Colorado for my daughter's softball tournament and this was a convenient place to grab a bite in between games. Fast casual ambiance, friendly service and food was solid. I ordered a battered fish taco, which was one of their special style tacos. Those tacos come with rice and beans on the taco. I also got a chicken street taco and an order of queso and guacamole. Those items was slightly over $20. I thought a little pricy. The tacos were solid, not phenomenal but decent . The blue corn chips were outstanding and taste of fresh and homemade, and were thicker than your average chip which I personally like. Queso had peppers in it with a mild spice while the guac was tasty. They were pretty busy and my food came out relatively quickly and everybody was very polite. Overall, a solid restaurant with good food.

Located in an unassuming strip mall, one might not have high expectations, but this place is super clean, spacious, and bright. The owner is very friendly, and when we didn't know what to order, he made helpful suggestions which were on point! We ate there twice in two days while in the area, so that's gotta say something! Our first visit included various tacos including the poblano taco, carne asada taco, chips and queso. The next day included a smothered burrito, shrimp fajita taco and more chips plus guacamole. The blue corn chips were a nice change from the normal tortilla chips, and they had just the right amount of salt. The queso was flavorful and not too gooey or too thick. The guacamole was fresh and delicious. Pay at the counter and food is brought to your table. Just the nicest friendliest family and I love supporting small business. Bus your own tables if you like. This is our go to tie tacos now!

I'm sorry. This place has absolutely no business being this perfect and delicious. The carne asada blue corn taco packed so much flavor and yet I could still taste every component separately. The blue corn chips are fried perfectly and this place has Beautiful Queso Dip. The house made salsa is also perfect. I am pleased.

Old solid 3.5 stars for me Decent tacos, I lived all over the southwest and still have property down in Arizona so I'm a little bias to most places. What got me here even though there were multiple attempts over the year or so being in the area when they are closed. Love the fact they have blue corn. It's something I love when I'm in NM everything for me is blue corn. Street tacos which are ok but can upgrade 10cent or something more for blue corn sure. Only disappointment was i wanted the chicharron said rice and beans was thinking a small plate but no its a taco with rice and bean inside. Flavor wise was a little lacking to me for what the price was. Street tacos were better option to me. Meats are also pre-made and kept in warmer so little on the drier side. Ample seating inside, back and outside. Bathrooms out to side door with code as its shared. Service and staff upfront were friendly and helpful.

We came down to Longmont on a chilly Monday preparing to grab some tacos to go and hit up a brewery. Turns out all the breweries are closed until at least 3pm, so we decided to grab a seat instead. It's an order-at-the-counter place with an expansive menu of traditional street tacos, burritos and home specialty tacos. I was feeling the sea this day, so I chose the fajita shrimp and the beer batter fish tacos from the specialty menu. My husband got one of every kind of street taco - Asada, pastor, carnitas, pollo and barbacoa. Both of us selected the blue corn tortilla option because if it's in the name, it's gotta be done! I loved both of my tacos, although I was surprised to find that the bed of Spanish rice was wrapped inside the taco instead of underneath. The pan fried onions and jalapeños were still nice and crisp, but somehow caramelized, and the rice was flavorful as well. The tortillas held together really well and were generously stuffed with the proteins. My husband enjoyed all of his tacos as well, with the barbacoa being his favorite. We also grabbed a horchata since the beer/margaritas aren't available there and enjoyed a leisurely lunch before we sauntered over to an open brewery!

!!!! It's been so long since I've had decent tacos and I found it. No frills but they've got the flavor, quality ingredients, and a tortilla that doesn't fall apart. Food: -Beer batter fish and shrimp: Batter is crispy and not too oily. Pickled veg balances the savory and makes it refreshing despite the mayo sauce. The avocado sauce is yum. -Pastor: Pork is juicy and well flavored. Pineapple adds a nice citrus undertone. Service: Quick and polite. You order and pay at the register. Space: Casual and clean. Lots of seating.

+ breakfast burrito Ordered via food delivery service so afraid I can't speak to service or ambiance here. However, I spent $10 total for a handheld burrito including tip. So, it wasn't bad considering the level of convenience I needed lol. Okay- down to food. I ordered a bacon breakfast burrito with no cheese. A few bites in so far no cheese! I must admit it was a chicken burrito unless the bits of bacon are that small? Or maybe it's at the bottom you know how that goes. All in all though it's a really delicious burrito salsa verde? A moderate mild spice, chicken and potatoes (bite sized) cooked thoroughly not tough/raw. Would def patron this place again - will try in person :)
